Echigoojiya Hegisoba
This is a specialty of Ojiya, Niigata Prefecture.
We use soba flour grown in Niigata Prefecture and mill it ourselves. We then use Japanese seaweed glue plant (funori) to thicken it to produce soba.
We pursued the beautiful green color of the noodle, its elastic texture, and its smoothness while eating.
